Calling all cinnamon-lovers....there is a new cinnamon cereal you'll want to know about. It's Cinnamon Chex® and has a terrific cinnamon taste, the best of any product I've tasted. (I'm very picky when it comes to my favorite flavor, cinnamon) And, the crunch that only Chex can provide is perfect with the cinnamon. The cereal is great with skim milk for breakfast first thing in the morning or anytime of day. (eating it straight from the box as a snack is my son Christian's favorite way to consume it).
In the Betty Crocker Kitchens, we recently had the pleasure of developing recipes with new Cinnamon Chex. Cinnamon is a major flavor in baked goods, so it seemed very appropriate to try it in all of our favorites, i.e, sugar cookies, brownies for a Mexican Chocolate treat, cheesecake, it goes well with ginger and other spices and many, many other favorite foods and recipes. The great thing about using cereal in recipes is that you get all the nutrients from the cereal, i.e, see the recipe below is high in folic acid and iron and this great-tasting snack is an easy way to get the iron you need.

Snickerdoodle Chex® Mix
Start to Finish: 15 Minutes
1/4 cup sugar
1 teaspoon ground cinnamon
2 cups Cinnamon Chex® cereal
2 cups Chocolate Chex® cereal
4 cups popped popcorn
1/4 cup butter or margarine
1. In small bowl, mix sugar and cinnamon; set aside. In large microwavable bowl, mix cereals and popcorn.
2. In 1-cup microwavable measuring cup, microwave butter uncovered on High about 40 seconds or until melted. Pour over cereal mixture, stirring until evenly coated.
3. Microwave uncovered on High 2 minutes, stirring after 1 minute. Sprinkle half of the sugar mixture evenly over cereal mixture; stir. Sprinkle with remaining sugar mixture; stir. Microwave 1 minute longer. Spread on waxed paper or paper towels to cool. Store in airtight container.
