As much as I like to be in the kitchen cooking up a storm, there are a few culinary tasks that I dread. One of them is touching and cutting raw meat because sometimes it’s slimy and requires lots of hand washing. So thanks to supermarket convenience, I’ve always bought the pre-packaged and trimmed meat. I was trying to resist going out to dinner tonight and needed a quick at-home meal idea that would satisfy so I could say no to spending money in restaurants. When I was growing up, Bisquick was one-dimensional. When I saw the box it meant one thing – some delicious blueberry pancakes were in my near future. If you never heard of boxty, but you like potato pancakes, rosti or latkes, you’ll probably love this traditional Irish potato pancake. Boxty is like a cross between a pancake and a hashbrown. Like any basic dough, boxty can be prepared in many ways, from being fried as cakes in a skillet or cooked as dumplings on a simmering stew. Last Thursday I had just enough time to let my dog out after work before meeting my friends AC and Luke for happy hour at a local drinking establishment. We imbibed in a cocktail or two before heading home.
