Crispy Chicken Fingers
by AndiatBettyCrocker 2/26/2009 10:03:00 AM

If you are spending more time cooking at home and less time eating out (even at fast food restaurants), I have an easy recipe for you to make for dinner—Crispy Chicken Fingers. I brought groceries for our dinner over to Jason’s and Katie’s home on Tuesday night because we were baby-sitting Blake. On my way over to their place, I picked up my 88-year old mother so she could join us for the evening. Great Grandma, Shirley, read to Blake while Jack and I prepared dinner. Here is a pa...

Wedding Anniversary Celebrations
by AndiatBettyCrocker 2/24/2009 10:00:00 AM

A favorite tradition that Jack and I have is celebrating our wedding anniversary at B&Bs and country inns in Minnesota, Iowa and Wisconsin. We usually go on the weekend closest to Valentine’s Day, because we were married on February 14th. Our friends, Jim and Frankie were married on February 13th, a few years before us, and they have celebrated their anniversay with us since our first one. This year, we went back to the Rittenhouse Inn in Bayfield, Wisconsin. We hadn’t been there for...

Lyutenitsa: A DeliciousTomato and Red Pepper Spread
by AndiatBettyCrocker 2/17/2009 10:12:00 AM

When I was growing up, my maternal grandparents lived next door to us. I remember sitting on Grandpa's lap as he told me, in his thick accent, about Bulgaria—the country where he was born. (Bulgaria is bordered by Romania on the north and Greece and Turkey on the south. On the eastern border is the Black Sea and on the western border is Serbia, Montenergo and Macedonia.) He told me there were beautiful mountains near his home town and that the winters could get as cold as those in Minnesota. In one area of Bulgaria, there was a Valley of Rose...

Raspberry Pudding for Valentine’s Day
by AndiatBettyCrocker 2/12/2009 12:01:00 PM

One of my favorite Christmas desserts is a pretty red pudding made with raspberries. It’s a Norwegian recipe called Rodgrot, or “red pudding”. The smooth-textured raspberry pudding is served with heavy cream to pour over the top and sliced almonds.  I some made on Christmas Day to bring to our friend's home for dinner that night. But, why save this wonderful dessert just for Christmas? Since I love Rodgrot so much, I've decided to make it for Valentine’s Day and serve it with the heart-shaped cookies I bake...

Heart–Shaped Cookies for Valentine’s Day
by AndiatBettyCrocker 2/10/2009 9:44:00 AM

Valentine’s Day.  And, I also love anything heart shaped. After Jack and I were married on Valentine’s Day, 33 years ago, I started collecting dishes, vases, table runners and anything else with hearts on it. I am now passing my love of hearts to grandson, Blake (21 months old), who recently added the word “heart” to his very limited vocabulary. Over the weekend, Blake and I baked some heart-shaped cookies. I made two batches of sugar cookie dough and left one plain and dyed the other batch red, using paste ...

Sweets for Your Sweetie: Sea Salt Caramels
by AndiatBettyCrocker 2/6/2009 1:43:00 PM

I don’t know why, but sea salt caramels are everywhere.  I was given some as a birthday gift in September (Thanks! Maggie). There have been lots of articles about them on websites and in newpapers and magazines. I was given some homemade ones as a Christmas gift. One of the reasons they have become so popuplar is probably because of that sweet and salty flavor combination that we all know and love.  Here are some of the Vanilla Sea Salt Caramels I was given for Christmas. My freind Kath...

CHOCOLATE Pasta
by AndiatBettyCrocker 2/4/2009 4:20:00 PM

As it gets closer to Valentine’s Day, I’m thinking about hearts, flowers, candy and chocolates—aren’t you? But are you thinking about chocolate pasta? Normally I wouldn’t be either, but I was given a package of it as a Christmas gift this year.  I knew that our staff would want to taste it, and so we cooked some up. I ws surprised at how chocolaty it tasted and it wasn’t sweet at all. ...

Team-Building Cooking Class
by AndiatBettyCrocker 2/2/2009 2:19:00 PM

On a cold winter night last week, I attended a cooking class taught by Chef Royal Dahlstrom at the Kitchen Window, a cookware store in Minneapolis. Eighteen other members of my church (I promised to put them on my blog post) also signed up for this special class. That's me, second from the right in the front row. We were divided into six teams and each team was given recipes to prepare a part of our dinner menu.  Class Menu:Gazpacho Layered Salad with Roasted Pepper Vinaigrette Topped with a Broiled Mozza...
