What to Cook This Weekend: Beef Stroganoff

As I mentioned in my last post, my mom and aunt were visiting last week. They wanted to make a nice dinner for us. We didn’t even bother politely resisting, since we already knew what dish to ask for. Ten years ago my husband and I were at my aunt’s house for a family gathering and she served Beef Stroganoff. My husband—then my fiancé—loved, loved, loved it. He tried to recreate it once, and failed miserably. So, the opportunity to watch my aunt and take a cooking lesson from her was an opportunity to embrace. She cut a beef roast into strips (and advised that it is easiest when the meat is partially frozen). She tossed the beef with flour that was seasoned with salt and pepper, and added the beef to sautéed onions and sliced mushrooms in a heavy saucepan. To that she added beef broth, a can of cream of chicken soup, sour cream and parsley. Then, the stroganoff simmered for an hour before we served it over egg noodles.
