
I have waxed poetic on this blog about pie before, but as a pie lover (we had a pie buffet at our wedding that upstaged our wedding cake), I am of the belief that enough good things can never be said about pie.
In the last four days, I have made five pies: three blueberry, one strawberry with oatmeal streusel, and one lemon meringue. We entertained, and then were guests twice, and I offered to bring dessert each time. The fruit just looked so good at the market where I go, so pie seemed like the obvious answer, plus I never seem to get tired of it. I think I’ve come up with the perfect filling for fruit pies over the last few days:
Fruit Pie Filling
2 cups sliced fruit or berries
¼ cup brown sugar
¼ cup white sugar
5 tablespoons cornstarch
1 teaspoon melted butter
½ teaspoon cinnamon or nutmeg (depends on what you like)
¼ teaspoon salt
Mix the ingredients in the list above to fill your favorite pie crust. I like Pillsbury Refrigerated Pie Crusts when I am in a hurry.
