Cook for a Day, Eat for a Week

I like to cook for a day and eat for a week.  Lately, I have been cooking chicken breast and using it to prepare meals in advance.  While there are many ways to cook chicken, since I always seem to forget to thaw it (I buy in bulk and freeze it), I have found that the best way for me to prepare it is in the slow cooker.  I just put the frozen chicken breasts in the slow cooker, turn it to high and let it cook through, which takes about 4-5 hours. Then, I let it cool briefly before refrigerating it. 

Then I use the cooked chicken to prepare meals—lunches and dinners—in advance.  This week I am making:

White Bean Chicken Chili

“Healthified” Creamy Chicken Enchiladas

Tortilla Soup

Thai Chicken Salad

Easy Chicken Pot Pie

I also love to make nachos with chicken...here's last night's dinner.

Great post! I'd love to see this idea with vegetarian-cooking in mind. We don't eat meat at our house, but I'd still love to plan ahead and cook in advance! Any ideas for a future post? Thanks so much.
