Climb Brownie Mountain

One of the most fun food memories I have from being a kid is eating a Vermonster at Ben and Jerry’s to celebrate my friend’s birthday.  A bunch of us sat down to this creation and each dug in spoons to its massive splendor: 20 scoops of ice cream, tons of hot fudge, whipped cream and at least a few toppings like sprinkles and peanuts and gummi bears.   While in retrospect it is gross to think of that many spoons in a communal dessert, I do love the presentation of a grand dessert. 

I wanted to share a dessert that I bought recently that has the same wow factor.  I was entertaining in a hurry and bought a dessert at the grocery store called Peanut Butter Mountain.  It was a bowl of brownie cubes atop a generous mound of peanut butter mousse.  Then, it was covered in ganache and peanut butter candies.  I really love the concept and how many ways it could be tweaked.  Maybe chocolate mousse with brownies flavored with peppermint and topped with peppermint patty candies.  Or, strawberry mousse, brownie cubes and chocolate covered strawberries.  Any combination will delight!
