
Spicy Chipotle Pork Grilled Tenderloin
Have you heard about the new guidelines for cooking pork? If not, it might interest you to know that the USDA (U.S. Department of Agriculture) has lowered the recommended safe cooking temperature for whole cuts of pork from 160°F to 145°F and added a three-minute rest time as part of the cooking recommendations. Cooking raw pork, steaks, roasts, and chops to 145°F with the addition of a three-minutes rest time will result in a product that is both microbiologically safe and at its best quality.
The grilled pork tenderloin recipe that I've shared with you (above), still states that the pork be cooked to 155°F, bunow, according to the new guidelines for cooking pork, you can take it off the grill at 145°F and then let it rest at least 3 minutes before serving.
