If you love strawberries and cheesecake, this is the dessert for you. And, it was the perfect dessert for my friend Kathy, who loves all things strawberry.

Strawberry-Strawberry Cheesecake

To make the crust, grind shortbread cookies in a food processor to make cookie crumbs. Add melted butter and stir. Press crumbs into a 9-inch springform pan. (I always line a springform pan with foil when making cheesecakes to make sure there will be no leakage baking on my oven bottom.) Bake at 325°F for 8 minutes. 
Make the filling by mixing frozen strawberries with cream cheese, sugar, eggs and flavorings. After baking, arrange halved strawberries over the top and brush with melted currant jelly.
