Did you know stuffed cookies are a hot, new food trend? They are made by baking a cookie within a cookie. Don't believe me? You can check it out at Seriouseats.com.
For a really easy-to-make version of these cookies, Blake and I started with Pillsbury° Simply° refrigerated peanut butter cookie dough.
Each package contains 12 unbaked cookies, about the size of hockey pucks.

Place 6 dough rounds on a cookie sheet and press down slightly. Blake is really good at doing this.

Place a purchased peanut butter-filled sandwich cookie (Oreo) on top of each pressed out dough round.

Place another dough round over the sandwich cookies and press to seal.
Bake at 350°F for 16 to 18 minutes or until browned around the edges. Let stand 5 minutes before moving to a cooling rack.

No recipe needed. Makes 6 very delicious cookies!
