Shrimp Alfredo Primavera
Jack and I prepare dinner on Tuesday nights at Jason and Katie’s house, because Katie works late and it gives us a mid-week reason to see our grandsons. We have to keep dinner pretty simple and have it ready by 6:00pm. Since that’s the goal for most families with young children, I’ve decided to share the recipe we made this week with you.
The word, primavera means spring in Italian, and so it seemed like the perfect dish for this spring week. I asked Jack to snip some fresh chives from our backyard garden for the garnish since they are the first thing to come up after the snow melts.
I made one change in this 7-ingredient recipe and used whole wheat rotini for the bow-tie pasta and we served slices of whole wheat bread on the side. Here are Blake and Jack, enjoying their meal.
And not to be forgotten, here is Blake's younger brother, Finn (who will be 1 year old at the end of June). He sat with us at the table but he coudln't have any of the shrimp dish because he is still eating baby food—poor Finn.
