In China this year, February 3rd is the first day (of a 15-day celebration) to welcome in the New Year. The Chinese New Year is also known as the Spring Festival, even though it occurs in the winter. Based on the weather reports from across the U.S., I think we all need something to celebrate. So pick up some Chinese take-out (or better still, try a Wanchai Ferry frozen or shelf-stable dinner) and whip up a batch of these prize-winning cookies (from the Betty Crocker Cookie Mix Contest in 2010) to go with your dinner, this week.

Chinese Five Spice Almond Cookies
Prep Time: 55 Minutes
Start to Finish: 55 Minutes
1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
2 teaspoons Chinese five-spice powder *
1/2 cup butter or margarine, softened
1 egg
1/2 cup sliced almonds
3 tablespoons coarse white sparkling sugar
1. Heat oven to 350°F. In large bowl, combine cookie mix and five-spice powder until blended. Stir in butter and egg until soft dough forms. Stir in almonds.
2. Roll dough into 36 (1-inch) balls. Dip one side of each ball into coarse sugar. Place balls, sugar side up, 2 inches apart on ungreased cookie sheets.
3. Bake 10 to 12 minutes or until edges just begin to brown. Cool 2 minutes; remove from cookie sheets to wire rack. Cool completely. Store covered at room temperature.

*Chinese five-spice powder, also known as five-spice powder, is a mixture of five ground spices - cinnamon, cloves, fennel seed, star anise and Szechuan peppercorns. It is commonly used in Chinese cooking.
