Here’s a new one for me! I recently returned from a business trip to Birmingham Alabama, where I ordered the BBQ Omelette for breakfast. This omelette was filled with pulled BBQ pork and then topped with BBQ sauce. It was delicious!

Jeff took this photo of our group. His plate is at the center-front of this photo. I point this out because he also orderd the BBQ Omelette and if you look closely, you will see the small plastic cup that was filled with the BBQ sauce to pour over our omelettes.

My omelette was served with a side order of cheese grits and the biggest baking powder biscuits I’ve ever seen. Here are Nanci and Jeff, just getting ready to bite into one.

What is your favorite omelette (or omelet) filling? Jack and I have been making shrimp, potato and cheese omelets on weekends at our cabin. We started to make this filling to use up leftovers from a shrimp dinner that I ordered at a local restaurant. It is one of our favorite fillings and now we have to stop to order a shrimp dinner just to make a omelet the next morning. Does an Asian Omelet with rice, carrots, bell peppers and mushrooms sound good to you? Or, does that sound too weird to you?
