On most Sunday afternoons, we drive 3 ½-hours hours from our cabin to return to our home in Minneapolis. After returning home, I need a quick meal that’s easy to make. I like this flavorful and quick-to-make chicken entrée. I usually serve it with cooked pasta and a simple tossed salad. Don't let the name of this classic Italian dish scare you. It simply means, "jump (in the) mouth."

Chicken Saltimbocca
I made this last Sunday for Jack, Jason and Blake—when Katie was out of town. Blake liked his, cut into bite-size pieces and served with leftover spaghetti sauce for dipping.
