My Favorite Kitchen Gadget for Fall

What is yor favorite kitchen gadget? When asked what my favorite kitchen gadget for fall cooking and baking was, I immediately knew what my answer would be. It’s an apple peeler/corer/slicer.

I recently used it when I made breakfast for our wine group (4 couples in all) at our cabin. This is a great time-saving gadget, which is especially important when you are making breakfast for 8 hungry friends. Here is a photo of what I made for their breakfast and the recipe below.

Spiced Whole Wheat Waffles with Cinnamon Apples

¼ cup butter
8 apples, peeled, cored, sliced
1 teaspoon cinnamon
3 cups Gold Medal® whole wheat flour
1 tablespoon baking powder
1/4 cup sugar
2 teaspoons pumpkin pie spice*
4 eggs
1 cup butter, melted
2 1/2 cups milk
2 teaspoons vanilla
1 cup finely chopped pecans
2 1/4 cups maple-flavored syrup
Whipped cream

In large skillet, melt butter. Add apple slices and cinnamon; cook over medium-high heat until apples are tender, stirring frequently. Cover to keep warm.

Heat waffle maker. In large bowl, mix flour, baking powder, sugar. In medium bowl, beat eggs, butter, milk and vanilla with wire whisk. Pour over dry ingredients; stir just until moistened.

Spoon batter onto waffle maker, following manufacturer’s directions for recommended amount. Sprinkle about 2 tablespoons pecans evenly over batter. Close lid of waffle maker. Bake until steaming stops and waffles are deep golden brown.

Serve with syrup, apples and whipped cream.

8 large waffles (8 to 12 servings)

*If you don’t have pumpkin pie spice you can make it by combining the following ground spices: 1 teaspoon cinnamon, ½ teaspoon ginger, ¼ teaspoon allspice or cloves and ¼ teaspoon nutmeg.
