My Cure for Spring Fever? Key Lime Cupcakes!!

Hi, Kristen Here! I'm filling in for Andi while she's at a convention this week.
I know we've only just met but, I have a confession to make...
I love cupcakes.

Cupcakes and I have a bit of a rocky history though. Just between you and me, I hated cupcakes when I was growing up. I didn’t understand why someone would want a store bought cupcake with really dry cake piled high with overly sweet, flavorless frosting. But, I couldn’t avoid them. They were everywhere; school treats, birthday parties, picnics…. Eeek!
So, I protested and politely said ‘no thanks’ whenever they were around. That is until about 3 years ago when I was an intern here in the Betty Crocker Kitchens. Andi gave me a task to develop 4 new cupcake recipes for an upcoming cake magazine. I diligently researched the many flavors and endless possibilities and you know what? My dislike was slowly but surely developing into a love for these silly little sweets.
I came up with some delicious ideas and now… well I’m obsessed. I love cupcakes. I’m a cupcake convert!

With spring fever in full effect here in Minnesota I of course had to welcome the beautiful weather with a special cupcake. This Key Lime Cupcake is one of my favorite recipes because it is full of flavor and so fresh and delicious. Yes, a fresh tasting cupcake!! Who knew?!
The Key lime juice gives it a tart bite while the sweet cream cheese frosting mellows it out a bit. For a quick and easy wow I doubled lined the cupcakes. Just put two paper liners in the pan before you mix up the batter and one liner hugs the cupcake and the other billows out. So simple but so cute!

I packed them up in a few of these fun retro cupcake boxes. The boxes even have individual "cupcake support systems" to ensure that your cupcakes arrive at your destination as pretty as they left. So… go on! Celebrate the warm weather and bake up a batch of your very own tonight and let me know how it goes.
