St. Patrick’s Day Dessert

If you are looking for something green and easy-to-make for St. Patrick’s Day, why not make this Grasshopper Fudge Cake? It has just the right balance between a mild mint flavor in the cake and topping and the rich, fudgy, chocolate layer between them. Instead of the mint candies, garnish the top with some St. Patrick's Day candies or a shamrock!

The name Grasshopper comes from the green Grasshopper cocktail that was popular in the 1950s and 1960s.

I made the Grasshopper Fudge Cake the night before serving it. About 10 minutes before serving the cake, I took it out of the refrigerator to cut and plate. While serving, some of the pieces whipped topping slide off the fudge. Other pieces had spots of yellow in the whipped topping. I'm assuming that was the yellow food coloring. The cake was delicious. What can I do to prevent this from happening again when I make this desert.

I just stopped down in the test kitchens to check on the Grasshopper Fudge Cake that we made yesterday. We didn't experience the problem you had when the whipped topping slid off the fudge layer. We used Mrs. Richardson's fudge sauce which stays soft and gooey after being refrigerated. I'd love to send you a photo of the bite I just took of it, but I can't add it to this comment box. Andi
