Here’s a meal that almost makes itself. Last weekend Jason and Blake joined us at our cabin. On Saturday morning, we planned to drive to Hayward, Wisconsin (just 30 minutes south of our cabin) to watch the cross-country skiers cross the finish line at the American Birkebeiner race.
Blake helped me start our dinner, early in the morning, while he was still in his pajamas. I tied one of my aprons (with the cabin motif) around him.

I mixed the spice rub ingredients together from this Barbecued Baby Back Ribs recipe. Blake spooned the rub mixture over the slabs of ribs.

Then he rubbed the mixture into both sides of the ribs. After that, we put them into a slow cooker, got dressed and we left for town.

Around 8,000 skiers, from around the world, competed in the “Birkie” race. It was really fun to watch the skiers cross the finish line as they came right down the main street of Hayward, which was covered with snow for the race. Blake, the two-year old cook, watched the race from his dad’s shoulders. Don't you love Blake's new ski goggles?!

When we got back to the cabin, I roasted some potatoes with onions, mushrooms and bell peppers and made coleslaw to round out our menu. After the ribs were placed under broiler for just 5 minutes or so, our dinner was ready. It was a fun day!
