HI Andi--Just wanted to send you a photo of the Sunday breakfast idea I had for my kids. My youngest son's (Aaron's) favorite Sunday morning meal is Swedish Pancakes with bacon on the side. To give it a little "Olympic" flavor this morning as we were watching the morning recap of the weekend, my oldest son (Bennett) created international flags we taped to toothpicks and decorated his brother's plate with an Olympic mascot "Quatchi" before he woke up. It was a nice surprise and a new way to bring wow to one of our traditional favorites. Pretty fun and memorable morning! Great start to the week.
Note from Andi: Our relatives in Sweden make these paper-thin pancakes and serve them with jam or lingonberries for dessert. Do you have a recipes you would like to share with us?
Jeff sent me his recipe below:
Swedish Pancakes
1-1/2 Cups Flour
2 TBS Sugar
½ tspn salt
Sift dry ingredients
Use mixer to blend in 3 cups milk.
Add 2 eggs, beat in 1 at a time.
Spray 8” omelet pan with non-stick cooking oil (spray before every pancake to keep from sticking).
Heat on medium.
Pour enough batter to just about cover the bottom of the omelet pan (they’re better thin).
When pancake looks fairly firmed up around edges moving to the middle, flip to cook through.
Roll when finished and keep warm in an oven-safe glass dish covered with foil until ready to serve.
Top with syrup, jams/jellies, powdered sugar, fruit…whatever you like.
Makes about 15 Swedish pancakes
My kids prefer them light…can cook until they’re a bit specked brown.
