$2.00 Pumpkin Cookies

Every fall we wait for the Italian Deli, D’Amico & Sons, in General Mills to start selling their wonderful, soft, moist pumpkin cookies with lots of frosting.  Every noon as I walk by I see several dozen of these cookies lined up on the counter and I often stop and buy one…..or two. They are so delicious that I really don’t mind spending $2.00 for each one. At $2.00 each however, I wouldn’t buy a dozen of them. And so, we decided to come up with our own recipe for Pumpkin Cookies with Browned Butter Frosting in the test kitchens.

I baked a double batch of these cookies before Blake came over to stay with us on Friday night. Early on Saturday morning, he helped me frost them. We brought some over to Great-grandma Shirley, Blake took a dozen home with him and there were still some left for Jack and me.

It's nice to have a helper in the kitchen!

Like this idea...pumpkin is my FAVORITE. This looks like something I may try this weekend to treat my boys...they're a bit older now that they're teens, but love to help in the kitchen. And Sunday is Dad's day to man the kitchen! Would be nice to have the company.

Cate, I just read an article titled, "The Great Pumpkin Void." Apparently, there is a shortage for pumpkin from last year as a result of the poor pumpkin crop a year ago. Since pumpkin is harvested and canned once a year, we are still waiting for cans of it from this year's harvest. I'd recommend picking up your canned pumpkin for pies or any other baked products early this year! Andi

I can't wait to try these. I'm going to be in charge of treats for Thanksgiving, and these will be a huge hit. How important is the browned butter? (I'm afraid i'll burn it)

JJC, The browned butter is what gives the frosting such great flavor. Once the butter starts to brown, it does change really quickly. It's better to take it off the burner too soon (resulting in less flavor) than letting the butter burn.
