Wine Bread

In a recent email, my friend Hilary suggested that whenever we visited Bayfield, Wisconsin, we should buy some “wine bread “ at the Candy Shoppe. She suggested placing an order for it, the day before. Here is my phone conversation with the shop owner when I called to place an oder for the bread:

Candy Shopper Owner:  “Hello, Candy Shoppe.”

Andi: “I’d like to place an order for some wine bread.”

Owner: “What kind would you like?”

Andi: “Well, what kind do you have? (Thinking that it was some sort of appetizer bread) “Do you have Merlot or Chardonnay bread?”

Owner: “No, We have the following flavors: raspberry, blueberry, lemon, strawberry, apricot, blackberry, cherry, pineapple, pumpkin and almond.”

Andi: “So you mix wine with the fruit? Are the breads you bake, Quick Breads?”

Owner: “No, they are yeast breads.”

Andi: “Well then, can I slice them and put the slices in a toaster?”

Owner: “No, they are like coffee cakes.”

Andi: “Ahhh.  Well then, why do you call them wine breads?”

Owner: “Because this is a very old family recipe from my mother.  She used fermented fruit in her loaves and always called them wine bread.” 

We made a trip to Bayfield and bought a couple of loaves of wine bread. This is the only slice left from a raspberry loaf. It is a coffeecake full of puréed fruit and cream cheese with the dough on top, not quite folded together.  It's topped with chopped nuts and lots of frosting. YUM! Have you ever heard of wine bread? I did a quick online search and couldn’t find a single recipe for it. I wonder if this is an old-world recipe?

My husband and I have a small inn in Bayfield (Ole and Lena's Place) and we are definitely fans of the Candy Shoppe wine bread! It's a family owned and run store and the recipe is from the owner's mom who revised a Croatian recipe. It is a very tasty treat indeed. If I had to choose a favorite, it would be blueberry made of course with Bayfield blueberries!

My hubby's from the Ashland/Bayfield/Washburn area, and my mother-in-law made this all the time. I got a copy of her recipe, which looks to have come from a 1950s-era church recipe book. Here 'tis: Wine Bread 1 c milk, scalded and cooled. Add 1 cake yeast (one package), 1 t sugar, 4 beaten egg yolks. To 4 c flour add 1 c shortening (butter is best), 1 t salt, and 2 T sugar. Work these ingredients as for pie crust. Add liquid ingredients and mix. Using a small amount of flour knead dough until smooth. Cover dough and place in refrigerator. Let rise 1 hour. Divide dough into 3 or 4 parts, depending on size of breads you prefer. Roll out in rectangular form, about 1/2 inch thick. Spread filling across middle third of dough, lap one side over filling, and spread filling over this, then lap remaining side over filling and place on cookie sheet. Let rise. Bake in 350 degree oven until done (lightly golden). When cool, frost with butter cream icing: 1 stick butter 1 t vanilla 1/2 and 1/2 (as much as needed to get to desired consistency) Powdered sugar (as much as needed to get to desired consistency) NOTE: Solo brand fillings are very good for wine breads. I use apricot a lot!
