A Quick and Satisfying Swedish Breakfast

After blogging about Swedish open-faced sandwiches, I started longing for a typical Swedish breakfast of Flatbrod (flat bread) with slices of cheese and sausage on top.

 

The flatbrod are thin crisps that look like big crackers. They are usually made with rye flour, but some are made with wheat, barley or potato flour. Some are quite thick while others are very thin and brittle. They are sometimes served on little wooden plates.

This is a typical display of flat breads in a supermarket near my home. (We have a large population of Scandinavians living in Minnesota and so there are lots of different varieties and brands of flatbrod on the shelves!)

 

Here is Jack's plate with his flatbrod, topped with cheese and sausage. (He stacked them three high, but you eat them only one at a time.) The egg on the side is a soft-cooked (for only 3 minutes after the water comes to a boil). Soft-cooked eggs are usually served in  little egg cups but I didn't have any at our cabin, so I just put them on the side of the plate. I buy pasteurized eggs when I want to serve them soft-cooked.

Pasteurized eggs are a must when serving them soft cooked. I love Davidson's for the great flavor, especially the yolk! Ask your store to carry them, if they don't. It should be their responsibility to make safe food products available. And if you want coupons, go to the Davidson's web site -- safeeggs.com.
